Step 1

Add the chicken to the slow cooker. Peel and slice the shallots or onion and add them along with the curry paste, tin of tomatoes, chicken stock, cumin, coriander powder, ginger puree, and garlic puree. Mix well and cook on high for 3–4 hours or low for 5–6 hours. You can cook for longer if needed, but the chicken may dry out slightly.

600 g Chicken breast

2 Echalion shallots

2 tbsp Butter chicken curry paste

400 ml Chopped tomatoes

1 tsp Cumin powder

1 tsp Coriander powder

1 tsp Ginger puree

2 tsp Garlic puree

Step 2

An hour before you are ready to eat, add the butter, yoghurt, honey, and a handful of fresh coriander. Add the rice and mix well. Place the lid back on top, set the slow cooker to high, and cook for 30 minutes.

2 tbsp Salted butter

1 tbsp Greek yoghurt

1 tbsp Honey

1 handful Fresh coriander

260 g Dried basmati rice

Step 3

Remove the lid and mix well, then replace the lid and cook for a further 30 minutes.

Step 4

Serve with more fresh coriander and sliced spring onions.

Notes

You can cook for longer if you’re working but the chicken may dry out slightly, but you could always replace the breast with thigh which is much more forgiving when being cooked for longer periods of time.

Serve with more fresh coriander, and sliced spring onions.

The chicken stock was missing off of the methods ingredient list. The rice was a little mushy for my liking
