Step 1
Preheat the oven to 200°C.
Step 2
Peel and roughly chop the carrots and new potatoes, halving or quartering the potatoes if large. Add them to a large hob-safe pan, or use a roasting dish.
600 g New potatoes
400 g Carrots
Step 3
Make a hole in the centre of the pan and place the chicken in the middle. Pat it dry with kitchen roll.
1 Whole chicken
Step 4
Add the olive oil, paprika and garlic powder to a jug and mix well. Drizzle the mixture over the chicken.
4 tbsp Extra virgin olive oil
1 tsp Paprika
1 tsp Garlic powder
Step 5
Place the chicken and vegetables in the oven and roast uncovered for 1 hour.
Step 6
Remove the chicken and vegetables from the oven. Place the chicken on a chopping board to rest and transfer the vegetables to a separate plate.
Step 7
Place the pan on the hob with the juices still in it, or transfer the juices to a saucepan if using a roasting dish. Add the gravy granules and water, then whisk over a low heat until thickened.
4 tbsp Gravy granules
400 ml Boiling water
Step 8
Slice the chicken and serve.

Use a large pan suitable for the hob; if not, a roasting dish is fine. Transfer the juices to a saucepan to make the gravy.

Delicious and really did do a roast in just one pan. Added extra veg with quartered onions, chunks of pepper and butternut squash. Everyone cleared their plates
