Step 1
Preheat the oven to 200°C.
Step 2
Add the rice, chicken stock, soy sauce, sesame oil, and garlic puree to a large baking dish. Mix well, then add the broccoli and stir again.
100 g Broccoli florets
600 ml Chicken stock
1 tsp Garlic puree
1 tbsp Soy sauce
1 tsp Sesame oil
260 g Washed basmati rice
Step 3
Add the chicken thighs skin-side down first to coat the skin, then place them on top of the rice skin-side up. Drizzle with a little olive oil, cover with tin foil, and bake in the oven for 40 minutes.
1 kg Bone in chicken thighs
Step 4
Meanwhile, add the ingredients for the honey and garlic glaze to a bowl and mix well until fully combined. Remove the chicken and rice from the oven once 40 minutes is up. Use a fork to fluff and mix the rice a little if it is not cooked through in some areas. Brush the thighs with the glaze and drizzle any excess sauce over the rice.
2 tbsp Honey
1 tsp Sesame oil
1 tbsp Soy sauce
1 tsp Garlic puree
1 tsp Ginger puree
Step 5
Return the chicken and rice to the oven uncovered for a further 15–20 minutes, until the skin is golden and the rice is fully cooked.

Was very tasty. I think I’d double up on the sauce next time so I’ve more to put over the rice. Served with some sweet chilli sauce for the kids as I knew they wouldn’t eat the skin and may miss out of flavour. This was the first time ever my 3 year old ate broccoli. He actively went looking. For it on his sisters plate after he ate his. So a win win for us!
